Had your fill of corn on the cob? Not when you try this spicy new twist on summer’s most popular veggie. From 4 Ingredients Gluten-Free by Kim McCosker and Rachael Bermingham.
SERVES 4
4 ears corn
2 tablespoons GF mayonnaise
2 tablespoons grated Parmesan cheese
1/2 teaspoon cayenne pepper
Preheat the oven to 350°F. Place the unhusked corn directly on the oven rack and bake for 20 minutes, or until the corn is soft when you press on it. Peel the husks back, but do not pull off. Remove the corn silk and tie each husk together with a piece of husk so you can hold on to it like a handle.
Preheat a grill or the broiler. Grill or broil the corn for 6 minutes, or until the kernels are slightly blackened all around and start popping. Rub the corn with the mayonnaise and sprinkle evenly with the Parmesan and cayenne pepper.
Optional: Serve with lime wedges.
